Mexican Flag Soup

Tomatillos can be eaten raw or cooked. They taste like a mix between a tomato and a tart strawberry. They are rich in vitamin C and K
Ingredients
- 1 large red bell pepper quartered
- 1/2 cup tomatillos or 1 tomato
- 1 lime or lemon, freshly juiced
- 1 small avocado peeled, pitted
- 1 small jalapeno
- 3/4 cup cilantro
- 1 large yellow bell pepper quartered
- 1 cup cherry tomatoes
- 2 cups hot water
- 1 clove garlic
- 1/4 tsp Himalayan pink salt
- 1/4 tsp black pepper ground
Instructions
- Place all ingredients in high speed blender. Blend on soup setting or for 90 seconds until smooth.
- Garnish with cilantro.
- Yield: 4 Servings
