Tangerine and Mango Salad

Tangerines are high in lutein and zeaxanthin. When 3 servings of these nutrients are consumed daily, they decrease the risk of developing non-Hodgkin’s lymphoma (a type of cancer).
Ingredients
- 2 tangerine peeled and segmented
- 1 green mango peeled, pitted, and diced
- 2 tbsp red onion finely diced
- 1 tomato finely diced
- 2 tbsp cilantro chopped
- 1 tbsp mint leaves chopped
- 1/2 tsp honey raw
- 1/2 lemon freshly juiced
- 1/4 tsp cumin ground
- to taste Himalayan pink salt
- to taste black pepper ground
Instructions
- Combine all ingredients in a large salad bowl.
- Toss well and serve.
- Yield: 4-6 Servings
